Instructions

In a pan sauté onion and other greens in olive oil. Strain for about 2-3 hours and season with salt and pepper. Prepare the dough with the required ingredients and divide into 4 pieces. Roll each piece into a thin sheet. Cut each sheet into 10 cm rounds. 

Place 1 tablespoon of filling on each round, fold and then crimp the edges of the pies shut using a fork. Fry in hot olive oil until golden brown on both sides. Drain on absorbent kitchen paper.

  • 1 kg wild greens and spinach
  • 1 bunch of parsley, finely chopped
  • 1 bunch of mint, finely chopped
  • 4-5 shallot onions, finely chopped
  • ½ glass of olive oil
  • salt and pepper

 

Ingredients for the pastry dough

 

  • ½ kg of flour
  • 1 glass of water
  • 2-3 tablespoons of olive oil
  • 1 teaspoon of salt
  • 2-3 tablespoons of lemon juice
  • olive oil for frying
  • 1 bunch of parsley, finely chopped
  • 1 bunch of mint, finely chopped
  • 4-5 shallot onions, finely chopped
  • ½ glass of olive oil
  • salt and pepper
