Γιορτή Μεσσηνιακής Γαστρονομίας 2019

Οι μοναδικές γεύσεις και τα ποιοτικά προϊόντα της Μεσσηνιακής γης ήταν οι απόλυτοι πρωταγωνιστές των φετινών “Σεμιναρίων Μεσσηνιακής Γαστρονομίας”, που πραγματοποιήθηκαν με επιτυχία το τετραήμερο 13-16 Νοεμβρίου 2019, στις εγκαταστάσεις της Costa Navarino, με τη συμμετοχή πλήθους επαγγελματιών του χώρου της εστίασης και σπουδαστών.


Μια συνεργασία που υλοποιείται για 7η συνεχή χρονιά από το Επιμελητηριο Μεσσηνίας, το Ίδρυμα “Καπετάν Βασίλη & Κάρμεν Κωνσταντακόπουλου” και το Σχολείο Τουρισμού Καλαμάτας, και για πρώτη φορά με την υποστήριξη της ομάδας των επαγγελματιών του διατροφικού τομέα «Μπριγάδα».


Τις δύο πρώτες μέρες, επαγγελματίες της περιοχής, μέσα από τα εργαστήρια μαγειρικής τέχνης, την επίδειξη τεχνικών και τη γαστρονομική δοκιμή, παρουσίασαν συναρπαστικούς γευστικούς συνδυασμούς και δημιουργική αξιοποίηση των Μεσσηνιακών προϊόντων, υπενθυμίζοντας σε όλους την πλούσια παράδοση του τόπου μας. Παράλληλα, πραγματοποιήθηκαν εισηγήσεις από επαγγελματίες της γαστρονομίας και του τουρισμού. Πιο συγκεκριμένα, στις 13 Νοεμβρίου ο κ. Nico Bartalini παρουσίασε το πετυχημένο παράδειγμα της Τοσκάνης. Στη συνέχεια η ομάδα του “Tinos food path” εξήγησε πως η προσπάθεια των επαγγελματιών του νησιού αλλάζει τον τουριστικό χάρτη αναδεικνύοντας την τοπική γαστρονομία. Ο κ. Γιάννης Τζαβλόπουλος ανέλυσε πως τα τοπικά προϊόντα αποτελούν την εμπορική ταυτότητα μιας περιοχής και τέλος μέλη της ομάδας “Meating Greece”πραγματοποίησαν επίδειξη κοπής κρεάτων.


Στις 14 Νοεμβρίου, ο chef Δημήτρης Σκαρμούτσος, μίλησε για τη σημαντικότητα της χρήσης τοπικών προϊόντων στην κουζίνα και πως αυτά συμβάλουν στην ανάπτυξη του εστιατορίου. Στη συνέχεια ο chef Δημήτρης Νίκολης έκανε μια ιστορική αναδρομή των μεσσηνιακών προϊόντων από την αρχαιότητα έως σήμερα και αναφέρθηκε στην εξέλιξη της γαστρονομίας. Τέλος ο Θωμάς Δούζης, διευθύνων σύμβουλος του “ΕΡΓΟΝ” ανέλυσε το επιτυχημένο παράδειγμα της εταιρείας θεωρώντας την γαστρονομία ως ένα σημαντικό τουριστικό προϊόν.


Την Παρασκευή 15 Νοεμβρίου, ακολούθησαν εκπαιδευτικά προγράμματα για μαθητές, ενώ η τελευταία μέρα έκλεισε με ενδιαφέρουσες εισηγήσεις, μόνο για τους επαγγελματίες της εστίασης, που ανέδειξαν την αξία της ολοκληρωμένης διαχείρισης μιας Μεσσηνιακής γαστρονομικής εμπειρίας για κάθε επισκέπτη της περιοχής. Το πρόγραμμα περιελάβανε εισήγηση από τον Στράτο Κορνά, καθηγητή Μαγειρικής Τέχνης με θέμα “Η εκπαίδευση στους χώρους εστίασης”. Στη συνέχεια ο κ. Ντίνος Στεργίδης, δημοσιογράφος οίνου και οργανωτής έκθεσης Οινόραμα, αναφέρθηκε στη σημασία της Προστατευόμενης Ονομασίας Προέλευσης στο μάρκετινγκ του κρασιού. Ακολούθησε η εισήγηση από την κυρία Αθηνά Πάνου, Food blogger/photographer & Social Media Manager με θέμα “Εστιατόρια και Social Media” και τέλος το τετραήμερο πρόγραμμα έκλεισε με την ενδιαφέρουσα ομιλία του Chef Γιάννη Μπαξεβάνη, ο οποίος αναφέρθηκε στη σημασία των τοπικών προϊόντων και πως αυτά αποτελούν το καλύτερο προϊόν διαφήμισης για την περιοχή της Μεσσηνίας.


Ο Πρόεδρος του Επιμελητηρίου Μεσσηνίας κ. Βαγγέλης Ξυγκώρος, ιδιαίτερα ικανοποιημένος για τη συμμετοχή και το ενδιαφέρον των συμμετεχόντων, αναφέρθηκε πως στόχος των σεμιναρίων που πραγματοποιούνται τα τελευταία 7 χρόνια είναι να παρουσιάσουν στους επαγγελματίες της εστίασης και του τουρισμού όλες τις νέες τάσεις και εξελίξεις στον χώρο της γαστρονομίας, δείχνοντας παράλληλα τον δρόμο για μια βιώσιμη τουριστική ανάπτυξη της Μεσσηνίας.


Ο Γενικός Διευθυντής του Ιδρύματος “Καπετάν Βασίλη & Κάρμεν Κωνσταντακόπουλου” κ. Ξενοφών Κάππας, εξέφρασε την ικανοποίηση του για την άψογη διοργάνωση και τις ευχαριστίες του για τη συνεργασία των συνεργαζόμενων φορέων. Η «Γιορτή Μεσσηνιακής Γαστρονομίας» αποτελεί πλέον θεσμό για τη Μεσσηνία καιαυτό μας δίνει τη δύναμη να συνεχίσουμε με μεγαλύτερο ζήλο την προσπάθεια μας. Στόχος μας παραμένει η συνεχής βελτίωση του γαστρονομικού και τουριστικού προϊόντος της Μεσσηνίας, έτσι ώστε οι επαγγελματίες του χώρου να μπορούν να ανταποκριθούν στις υψηλές απαιτήσεις των επισκεπτών της περιοχής.


Ο κ. Διονύσης Παπαδάτος, Υπεύθυνος δράσεων του Ιδρύματος Καπετάν Βασίλη και Κάρμεν Κωνσταντακόπουλου και το πρόσωπο πίσω από τη διοργάνωση της εκδήλωσης, εξέφρασε τις ευχαριστίες του προς όλους τους συμμετέχοντες που παρακολούθησαν τις εργασίες του τετραήμερου εορτασμού μεσσηνιακής γαστρονομίας. Τόνισε επίσης τη σημαντικότητα της συμμετοχής μεσσηνιακών εστιατορίων καθώς και επαγγελματιών chefs, στα workshopsμαγειρικής και τους ευχαριστεί ιδιαίτερα για αυτό. “Φέτος συμμετείχαν 19 εστιατόρια από τη Μεσσηνία όπου είχαν τη δυνατότητα να παρουσιάσουν στο κοινό συνταγές, αναδεικνύοντας τις μαγειρικές τους δεξιότητες και κυρίως τα μεσσηνιακά προϊόντα. Ύστερα από 7 χρόνια εκπαίδευσης, έρευνας και δημιουργικού διαλόγου, μας χαροποιεί ιδιαίτερα το γεγονός ότι πλέον πρωταγωνιστές της δράσης είναι οι Μεσσήνιοι εστιάτορες και επαγγελματίες του χώρου της γαστρονομίας και του τουρισμού, οι οποίοι συμβάλουν καθοριστικά με τις δικές τους δυνάμεις στην ανάδειξη της Μεσσηνίας ως γαστρονομικού προορισμού”.

Educational Olive Oil Tasting Seminar

The “Captain Vassilis and Carmen Constantakopoulos” Foundation, with the support of the Messinian Chamber of Commerce and Industry, has organized an educational olive oil tasting seminar, which will take place on Thursday, March 28 2019, at 16:45, at the Elite City Resort hotel in Kalamata.


Dr Antonio Giuseppe Lauro, president of the EVO IOOC International Olive Oil Contest, will once again visit Kalamata in order to host a free-of-charge seminar titled: “How can Greece significantly increase its sales in bottled extra-virgin olive oil?”

How can the Greek quality olive oil industry increase standardized product sales in international markets? In order to penetrate a market today, it is not enough to only talk about “extra-virgin olive oil.”


In fact, there are many olive oils that are sold with that trade name, which is misleading for the consumer. Consequently, we have to talk about the quality characteristics of a product. Entrepreneurs in the field often wonder: Is product quality a major factor in commercial success?


Today quality is not enough; we must take it a step further. You must remember, however, that quality is a prerequisite, without which there is no point in taking on a commercial endeavor, a bottle and a label.


To this day, traditional means have been used to promote olive oil, such as conferences, exhibitions, market guides etc., but this is no longer sufficient. More tools must be employed, such as designation of origin (PDO/PGI), quality accreditations, the internet, social media, VIMEO & YouTube etc. The truth is that Greek producers have already been using those tools for quite some time, but, as I mentioned previously, a “quality system” must be created, which will include new ways of market promotion.


Simply designing a bottle is not enough. It must also contain a "premium" product, which is recognizable (why not talk about bitterness and spiciness to the consumers?), making the customer fall in love with it at first try!


International olive oil contests are a different chapter; take for example EVO, of which I am president, and which has been taking place in Southern Italy for the past 4 years. Participation in the contest on the one hand introduces the winners to a multichannel marketing system offered by the contest, such as online promotion, social media, buyers’ guides, events, seminars, thematic conferences etc.; on the other hand, it contributes to the improvement of quality, by encouraging companies to offer high-quality "premium" products. This is only the first step. 

No one is going to seek you out if you win a contest; you must work on it, and make targeted marketing moves. You must remember though that all this advertising activity puts the companies at risk, which is even greater than your exposure on social media. If you achieve a "premium" level of quality, you must be able to sustain it long-term, and if possible, increase it. Otherwise, you are facing a high risk of losing loyal customers.


The educational seminar is exclusively aimed at olive oil production, standardization and marketing businesses.

Food Service Professionals Workshop
The Messinian land’s unique flavors and pure products were the protagonists at this year’s Messinian gastronomy seminar, which took place the previous week, on the initiative of the “Captain Vassilis and Carmen Constantakopoulos” Foundation, with the participation of a great number of food service professionals.
Seven professionals from the area presented exciting flavor combinations and creative ways to use Messinian products; the venue of the practical part of the seminar filled with colors and aromas, reminding everyone of Messinia’s rich tradition. 
Prior to that, the theoretical part of the seminar had taken place, with a series of interesting talks on the value of integrated management of Messinian gastronomy experiences for every visitor of the area.  
More specifically, at the seminar’s opening talk, Mr. Thodoris Spiliotis discussed the principles of Athonian management, and how they can be put into practice in the organization and operation of a business. Afterwards, Mr. George Pittas focused on the need to create gastronomy communities, with the aim of promoting Greek gastronomy, essentially for the development of the local community as a whole. Mr. Demosthenes Brousalis discussed the value of proper branding and marketing when setting up a restaurant. Concluding the theoretical part, Mr. Charis Tzanis presented the basic rules in order to achieve flavor harmony of food and drink. 
This year’s seminar was part of the 8th Kalamata School of Tourism, in collaboration with the Messinian Chamber of Commerce and Industry, and was aimed at a wide audience with an interest in the development of the area’s gastronomy tradition. 
The aim of the Messinian gastronomy seminars, which have been organized by the “Captain Vassilis and Carmen Constantakopoulos” Foundation for the past six years, is to present to the food service and tourism professionals all the current trends and developments in gastronomy, at the same time pointing to an overally sustainable development in Messinia, which will benefit the agricultural sector, society, culture, and the environment.
