Heat olive oil in a skillet until hot. Sauté the finely chopped onion, a little garlic, and the leeks. Add the grated tomatoes, a basil stem, a little bukovo, salt and coriander. Simmer tomato sauce until almost all liquid has evaporated. Crack two or three eggs directly into the skillet. Cook until whites are ready and remove from heat.
Eggs are a main source of animal protein, which has a high biological value for human nutrition. They contain vitamins, inorganic elements but also cholesterol. Tomatoes increase the antioxidant intake of this dish.
