Cut the pumpkin into cubes, boil, drain and set aside to cool. Squeeze to remove excess liquid. Grate the pumpkin and place into a pan with the olive oil. Add the sugar and stir until it dissolves. Cook until all liquids are absorbed. Remove from the heat, add the rest of the ingredients and stir until well combined. Grease 3 phyllo sheets and spread them out on a baking dish. Add the stuffing and top with the other 3 greased sheets. Bake at medium low heat. When the top phyllo layer is cooked, remove from the oven and douse with the syrup you have prepared.

Ingredients :

  • 1 red pumpkin
  • ¼ kg olive oil
  • ¼ kg sugar
  • 200 g black raisins
  • 200 g golden raisins
  • 200 g walnuts, coarsely chopped
  • 2 large rusks, crushed 
  • ½ tsp salt 
  • 1 tsp cinnamon
  • 1 tsp crushed cloves
  • 6 homemade phyllo sheets (or ½ kg phyllo dough for baklava)
  • olive oil to grease the phyllo sheets

For the syrup:

  • 1 cup water
  • ½ cup sugar
  • ½ cup honey
