Boil the spaghetti and drain well. Place the pasta back into the pot to keep hot. In a saucepan, heat the olive oil, and add plenty of grated mizithra. Sauté until it turns brown. Pour the hot olive oil and cheese onto the pasta and stir. Serve the dish with two fried eggs or an omelet on top of the spaghetti.
The combination of pasta with mizithra cheese is considered ideal from a dietary aspect, since a complete protein derived from an animal source (cheese) is combined with an incomplete protein derived from a plant source (spaghetti). This results in improving the overall biological value of the protein provided from this particular recipe.
