SCRAMBLED EGGS WITH SALT PORK, SUN-DRIED TOMATOES AND SFELA CHEESE

Instructions

Sauté the salt pork in olive oil for a few minutes. Add the finely chopped tomatoes in the skillet and cook until all liquid is absorbed. Add salt, pepper and balsamic vinegar and stir well. Beat the eggs with a pinch of salt. Add the bread and sun-dried tomatoes, pour the rest of the olive oil and then add the beaten eggs. Stir continuously and just before ready, add the sfela cheese.


Nutritional Value

Eggs are a main source of animal protein, which has a high biological value for human nutrition. They contain vitamins, inorganic elements but also cholesterol. Tomatoes increase the antioxidant intake of this dish while salt pork provides animal protein, iron, cholesterol and saturated fat.

Ingredients


  • 4 eggs
  • 4 pieces of salt pork (pasto)
  • 4 tomatoes, finely chopped
  • 10 sun-dried tomatoes, drained and cut into small pieces
  • 100 – 150 gr of sfela cheese
  • 2 tablespoons of balsamic vinegar
  • 1 teacup of extra virgin olive oil
  • 3 rusks or slices of dried bread, cut into small pieces
  • salt and pepper
