Mizithra is a traditional Greek cheese and is distinguished into fresh and dry mizithra. It is a hard white cheese, with high homogeneity and consistency. Its color is white or off-white and it has a pleasant and distinctive taste and flavor. Traditionally, mizithra is made of sheep and goat milk with the addition of natural rennet. Rennet comes from dry-curing the stomachs of milk-fed lambs and kids.  First, mizithra cheese is stored in 40-50 kg wooden barrels and then placed on a horizontal plank in the basement of the household.

NUTRITIONAL VALUE

Mizithra is a good source of milk protein (casein), minerals and calcium.  The phosphorus, magnesium and the vitamins (A, B, D) it contains contribute to bone and muscle health and protect against chronic diseases such as cardiovascular diseases, diabetes and hypertension. Mizithra should be consumed in moderation, as it is high in sodium and saturated fat (minimum fat content in dry matter: 50%).
