Instructions

Wash meat well and cut into medium sized portions. Soak potatoes in a bowl with water for 5 minutes. Wash potatoes well, rubbing their skin with a scouring pad. First place the potatoes in a dutch oven or ceramic pot, then the meat and finally the rest of the ingredients: sage, cheese, wine, olive oil and water. Season with salt and pepper. Cover with lid and cook overnight.

 

Nutritional value

Lamb meat contains high biological value protein, complex B vitamins, iron, zinc, selenium, but also saturated fat. Wine and olive oil increase the antioxidant value of the dish.

 

Historical background

Mixed meat pot roast is a third-generation recipe, which has remained unchanged through time. The only variation is that in the past the dish was cooked over an open hearth instead of a modern kitchen oven.
