Heat olive oil in a pot. Sauté the kid goat meat with onion and garlic. Add some warm water and braise. In another pot boil the wild greens. When meat is nearly cooked, add the wild greens. Prepare an egg-lemon sauce. Pour sauce in the pot, stir well and let it simmer for 10 minutes. Remove from heat and leave to rest for 30 minutes.
Kid goat meat contains high biological value protein, complex B vitamins, iron, zinc, and selenium. Wild greens from Taygetos increase the antioxidant value of the dish.
Feasts and special occasions
Fricassee is traditionally prepared with pork and celery. In Messinia it used to be and still remains the main dish on the Christmas menu.
