Kalamata Olive Tapenade

Instructions

Place ingredients into a food processor and pulse to a puree. Transfer the mixture into a bowl and place in the refrigerator (for up to a week).


Tips

1. If you want a spicier tapenade, use spicy mustard

2. Instead of throwing away the bruised olives which you might not want to served with a meal, use them to make the tapenade

  • 250 g pitted Kalamata olives
  • 2-3 tablespoons mustard with oregano and thyme
  • 1 tablespoon capers
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Kalamata extra virgin olive oil
  • 1 red Florina pepper, seeded
