Grate the zucchini with a grater and squeeze it well to get rid of excessive water. Add the herbs, the semolina, the egg, salt, pepper and mix them well until they are combined and become a uniform mixture. Then form small balls with your hand, dip them into flour and fry them into hot olive oil.
It is an appetizer rich in fiber and antioxidants.
