Grate tomatoes using a box grater or a food processor. Cut the pepper into small pieces or long, thin strips. Put the tomato pulp and pepper in a deep skillet and simmer until all liquid has evaporated. Pour some olive oil. Add the feta cheese, cut into small pieces, the beaten eggs, salt and pepper. Optionally, add diced salt pork (pasto).
Eggs are a main source of animal protein, which has a high biological value for human nutrition. They contain vitamins, inorganic elements but also cholesterol. The tomatoes and the pepper increase the antioxidant intake of this dish.
