EGGPLANTS WITH AROMATIC CHEESES

Instructions:

Slice the eggplants into round pieces, wash, drain and fry them in hot olive oil. Place a layer of fried eggplants on a baking sheet and sprinkle parsley and feta cheese on top. Repeat with a second layer of eggplants and graviera cheese, then a third layer of eggplants and feta cheese. Finish with a fourth layer of eggplants and tomato sauce and sprinkle graviera cheese on top.


Nutritional Value

The eggplants are rich in vitamins and minerals. The eggplant is also a good source of B-complex vitamins. The combination of eggplants with feta and graviera cheese is a good source of animal protein, calcium, phosphorus and vitamin D.
