Egg scramble with cured meat

Grate the tomatoes and boil until they absorb their juices. Season with salt, pepper and olive oil. Whisk the eggs in a bowl and add them to the boiling tomatoes; as soon as the eggs “rise,” stir and add the cured meat. Serve with feta cheese.

Eggs are an essential source of animal protein of high biological value in our diet, and they are rich in vitamins, minerals and cholesterol. The tomatoes increase the antioxidants in the dish and the cured pork provides proteins of animal origin, iron, cholesterol and saturated fat.
