CHICKEN WITH KALAMATA FIGS

Instructions

Take the chicken breast and sauté thoroughly. Add figs and orange zest. When combined, cook for a few more minutes to release their flavors. Add the sauce and let it simmer. Add some lukewarm water, if needed. If sauce is too watery, thicken by adding some corn flour. Serve with rice.

Chicken meat is an important source of high biological value protein, iron, phosphorus and magnesium and contains B-complex vitamins, such as B12. Chicken is a healthier alternative to red meat. According to the Mediterranean Diet Pyramid, up to 4 servings of chicken can be consumed per week. Compared to other types of meat, chicken is a better option as it has the lowest content in total and saturated fat. The inclusion of figs increases the antioxidant properties of this dish.

Ingredients


  • 4 chicken breasts, marinated with the rest of the ingredients for 2-3 hours
  • a pinch of salt (because we will also be adding soy sauce)
  • white pepper
  • 2 teaspoons cumin
  • 2 teaspoons coriander powder
  • 2 teaspoons curry
  • 1 teaspoon oregano from Taygetos
  • 16 dried figs, which we have soaked in water and strained
  • 8-10 orange rinds, zested


Sauce ingredients


  • 1 glass of orange juice
  • ½ glass of cognac
  • 2 tablespoons of soy sauce
  • 2 tablespoons of honey
