CHICKEN FILLET WITH GRAPE VINE SHOOTS

Instructions

Boil water in a saucepan and put the grape vine shoots. Lower the heat and let them simmer for 10-15 minutes. Add all the ingredients except for the meat and continue to simmer for another 10 minutes. When ready, turn off the heat and add the egg-lemon sauce. Roast the chicken on a charcoal grill. Serve dish garnished with vegetable sauce.

 

Nutritional value:

Chicken meat is an important source of high biological value protein, iron, phosphorus and magnesium and contains B-complex vitamins, such as B12. Chicken is a healthier alternative to red meat. According to the Mediterranean Diet Pyramid, up to 4 servings of chicken can be consumed per week. Compared to other types of meat, chicken is a better option as it has the lowest content in total and saturated fat.

  • 1 wine glass of parsley
  • 1 wine glass of mint
  • 1 wine glass of grated onion
  • 1 wine glass of fennel
  • 500 g of grape vine shoots
  • 1 chicken breast fillet
  • salt
  • ground green pepper
  • 2 eggs for the egg-lemon sauce
  • juice of 2 lemons
  • 500 ml water
  • olive oil
  • 3 tablespoons of vegetable sauce
