Soak the chickpeas overnight in warm water and salt. In a pan, add the onions and sliced peppers and sauté. Add the wine and chopped tomatoes, bring to boil and cook for 10 minutes. Cook the chickpeas and put them into a baking dish along with the vegetables, the bay leaf, salt and pepper. Cook in the oven until most of the liquid is absorbed.
Chickpeas are rich in nutrients and have low calorie content. Their caloric content can, however, be increased sufficiently by adding a large quantity of olive oil during or after cooking.
